Baked Semolina Custard
Ingredients
- 2 cups milk
- 15 lumps sugar (approx. ¾ cup)
- 1 tsp vanilla extract
- 3 tbsp semolina
- 2 eggs, separated
Method
- 1 In a saucepan, bring milk, sugar, and vanilla to a boil.
- 2 Whisk in semolina and boil for 15 minutes, stirring constantly.
- 3 Remove from heat and stir in egg yolks.
- 4 Fold in stiffly beaten egg whites.
- 5 Bake in a moderate oven (350°F) for 15 minutes and serve hot.
