Baked Semolina Custard

Ingredients

  • 2 cups milk
  • 15 lumps sugar (approx. ¾ cup)
  • 1 tsp vanilla extract
  • 3 tbsp semolina
  • 2 eggs, separated

Method

  1. 1 In a saucepan, bring milk, sugar, and vanilla to a boil.
  2. 2 Whisk in semolina and boil for 15 minutes, stirring constantly.
  3. 3 Remove from heat and stir in egg yolks.
  4. 4 Fold in stiffly beaten egg whites.
  5. 5 Bake in a moderate oven (350°F) for 15 minutes and serve hot.
