Baked Scalloped Oysters With Sherry
Ingredients
- 3 pints oysters
- 1 quart sifted bread crumbs
- Salt and white pepper to taste
- 1/2 cup soft bread broken into bits
- Small oyster crackers
- 1/2 cup soup stock
- 1/4 cup oyster liquor
- Butter, cut into fine bits
- 1 glass sherry
Method
- 1 Place a layer of bread crumbs in the bottom of a deep baking dish.
- 2 Add a layer of oysters and sprinkle with salt and white pepper.
- 3 Repeat layers until the dish is filled, ending with a top layer of crumbs.
- 4 Arrange soft bread bits and oyster crackers around the edge and on top.
- 5 Pour in soup stock, oyster liquor, and sherry, then dot generously with butter.
- 6 Bake at 350°F for one hour.
