Baked Scalloped Oysters With Sherry

Ingredients

  • 3 pints oysters
  • 1 quart sifted bread crumbs
  • Salt and white pepper to taste
  • 1/2 cup soft bread broken into bits
  • Small oyster crackers
  • 1/2 cup soup stock
  • 1/4 cup oyster liquor
  • Butter, cut into fine bits
  • 1 glass sherry

Method

  1. 1 Place a layer of bread crumbs in the bottom of a deep baking dish.
  2. 2 Add a layer of oysters and sprinkle with salt and white pepper.
  3. 3 Repeat layers until the dish is filled, ending with a top layer of crumbs.
  4. 4 Arrange soft bread bits and oyster crackers around the edge and on top.
  5. 5 Pour in soup stock, oyster liquor, and sherry, then dot generously with butter.
  6. 6 Bake at 350°F for one hour.
