Baked Savory Semolina Pudding

Ingredients

  • 2 ounces semolina
  • 1/2 pint water
  • 1 small onion, chopped
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon sweet herbs
  • 1/2 teaspoon pepper
  • 1 ounce butter, divided

Method

  1. 1 In a small saucepan, combine semolina, water, chopped onion, pepper, herbs, salt, and half the butter. Simmer for 20 minutes, stirring frequently.
  2. 2 Remove from heat and let cool slightly for a few minutes. Beat the eggs and stir them into the semolina mixture until well combined.
  3. 3 Pour the mixture into a baking dish or tin greased with the remaining butter. Bake for 30 to 45 minutes until set and golden.
  4. 4 Serve hot or cold. Alternatively, cut into small pieces and fry in butter until crisp.
