Baked Savory Semolina Pudding
Ingredients
- 2 ounces semolina
- 1/2 pint water
- 1 small onion, chopped
- 2 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon sweet herbs
- 1/2 teaspoon pepper
- 1 ounce butter, divided
Method
- 1 In a small saucepan, combine semolina, water, chopped onion, pepper, herbs, salt, and half the butter. Simmer for 20 minutes, stirring frequently.
- 2 Remove from heat and let cool slightly for a few minutes. Beat the eggs and stir them into the semolina mixture until well combined.
- 3 Pour the mixture into a baking dish or tin greased with the remaining butter. Bake for 30 to 45 minutes until set and golden.
- 4 Serve hot or cold. Alternatively, cut into small pieces and fry in butter until crisp.
