Baked Salt Pork Rice Casserole
Ingredients
- 4 oz salt pork
- 1 medium onion, minced
- 3 cups cooked white rice
- 2 green peppers, seeded and chopped
- 1 cup tomato sauce
- Salt and pepper to taste
- Breadcrumbs for topping
- Butter, cut into small pieces
Method
- 1 Fry salt pork in a skillet until crisp. Add minced onion and brown.
- 2 Remove from heat. Stir in cooked rice, chopped green peppers, and tomato sauce. Season with salt and pepper.
- 3 Transfer mixture to a buttered baking dish. Top with breadcrumbs and small pieces of butter.
- 4 Bake in a moderate oven (350°F) until browned and heated through.
