Baked Salt Pork Rice Casserole

Ingredients

  • 4 oz salt pork
  • 1 medium onion, minced
  • 3 cups cooked white rice
  • 2 green peppers, seeded and chopped
  • 1 cup tomato sauce
  • Salt and pepper to taste
  • Breadcrumbs for topping
  • Butter, cut into small pieces

Method

  1. 1 Fry salt pork in a skillet until crisp. Add minced onion and brown.
  2. 2 Remove from heat. Stir in cooked rice, chopped green peppers, and tomato sauce. Season with salt and pepper.
  3. 3 Transfer mixture to a buttered baking dish. Top with breadcrumbs and small pieces of butter.
  4. 4 Bake in a moderate oven (350°F) until browned and heated through.
