Baked Salt Cod Hash With Milk And Butter
Ingredients
- 1 pint salt codfish (freshened)
- 1 quart chopped, boiled potatoes
- 3 slices salt pork, cut into small pieces
- 1/3 cup milk
- Butter
Method
- 1 Freshen the salt codfish and combine it with the chopped, boiled potatoes. Mix well.
- 2 Cut the salt pork into very small pieces and fry until brown. Remove half the pork.
- 3 Add the fish and potatoes to the remaining pork in the pan. Let it steam for five minutes without stirring to prevent burning.
- 4 Stir in the milk. Arrange the reserved pork around the edge of the pan and dot with butter.
- 5 Simmer slowly for 30 minutes until a brown crust forms. Turn onto a platter and serve.
