Baked Salt Cod Fish Cakes
Ingredients
- Salt cod fish, soaked 24 hours in cold water with vinegar
- Fresh parsley, chopped
- Butter
- Vinegar
- Cayenne pepper
- Nutmeg
- Mace
- Boiled onions
- Mashed potatoes
- 2-3 egg yolks, beaten
- Sweet oil (for brushing)
- Breadcrumbs
- Toast slices, dipped in melted butter (for serving)
Method
- 1 Soak salt cod in cold water for 24 hours, changing water several times and adding a wineglass of vinegar each time. Boil until thoroughly done, then flake into small strips.
- 2 Mix flaked fish with parsley, butter, vinegar, cayenne, nutmeg, mace, boiled onions, mashed potatoes, and beaten egg yolks.
- 3 Form mixture into a thick round cake in a deep dish. Brush with sweet oil and coat generously with breadcrumbs.
- 4 Bake in a moderate oven (350°F) until browned. Serve surrounded by triangular toast slices dipped in melted butter.
