Baked Salt Cod Fish Cakes

Ingredients

  • Salt cod fish, soaked 24 hours in cold water with vinegar
  • Fresh parsley, chopped
  • Butter
  • Vinegar
  • Cayenne pepper
  • Nutmeg
  • Mace
  • Boiled onions
  • Mashed potatoes
  • 2-3 egg yolks, beaten
  • Sweet oil (for brushing)
  • Breadcrumbs
  • Toast slices, dipped in melted butter (for serving)

Method

  1. 1 Soak salt cod in cold water for 24 hours, changing water several times and adding a wineglass of vinegar each time. Boil until thoroughly done, then flake into small strips.
  2. 2 Mix flaked fish with parsley, butter, vinegar, cayenne, nutmeg, mace, boiled onions, mashed potatoes, and beaten egg yolks.
  3. 3 Form mixture into a thick round cake in a deep dish. Brush with sweet oil and coat generously with breadcrumbs.
  4. 4 Bake in a moderate oven (350°F) until browned. Serve surrounded by triangular toast slices dipped in melted butter.
