Baked Salt Cod And Potato Casserole

Ingredients

  • 4 cups mashed potatoes
  • 3 cups salt cod fish, freshened and picked fine
  • 1 small lump of butter
  • 2 well-beaten eggs
  • Cracker or bread crumbs
  • Bits of butter

Method

  1. 1 Beat mashed potatoes, salt cod, butter, and eggs together until very light.
  2. 2 Place mixture into a greased baking dish.
  3. 3 Cover the top with cracker or bread crumbs and bits of butter.
  4. 4 Brown in the oven and serve hot.
