Baked Salt Cod And Potato Casserole
Ingredients
- 4 cups mashed potatoes
- 3 cups salt cod fish, freshened and picked fine
- 1 small lump of butter
- 2 well-beaten eggs
- Cracker or bread crumbs
- Bits of butter
Method
- 1 Beat mashed potatoes, salt cod, butter, and eggs together until very light.
- 2 Place mixture into a greased baking dish.
- 3 Cover the top with cracker or bread crumbs and bits of butter.
- 4 Brown in the oven and serve hot.
