Baked Salmon With Tomato Onion Gravy

Ingredients

  • 1 small cleaned salmon
  • Olive oil
  • Salt and pepper
  • 1 cup boiling water
  • 2 tbsp butter
  • 1+ tsp cornstarch
  • Cold water
  • Grated onion
  • Lemon juice
  • Tomato catsup

Method

  1. 1 Rub salmon with olive oil, salt, and pepper. Place in a buttered baking pan.
  2. 2 Add 1 cup boiling water and 2 tbsp butter to the pan. Bake, basting every 10 minutes, until done.
  3. 3 Remove salmon and keep warm. Thicken pan juices with cornstarch mixed with cold water.
  4. 4 Season the gravy with grated onion, lemon juice, and tomato catsup. Serve over fish.
