  • 2 slices fresh salmon (about 1/2 inch thick)
  • Sweet butter
  • Mushrooms, finely chopped
  • 1 clove garlic, finely chopped
  • 1 shallot, finely chopped
  • 1/2 bay leaf
  • Fresh thyme and basil, finely chopped
  • Salt
  • Whole peppercorns
  • Butter (for rubbing paper)
  • Breadcrumbs, grated
  • Juice of 1 large lemon
  • Spanish sauce (optional)

Method

  1. 1 Steep salmon slices for 1 hour in sweet butter with mushrooms, garlic, shallot, bay leaf, thyme, basil, salt, and pepper.
  2. 2 Construct a small paper box. Rub the outside with butter and place the seasoned salmon inside, covering it with grated breadcrumbs.
  3. 3 Bake in a moderate oven (350°F) or place on a stove until the salmon is cooked through.
  4. 4 Brown the top using a salamander or broiler. Serve immediately with lemon juice squeezed over the top.
