Baked Salmon With Mushrooms And Herbs
Ingredients
- 2 slices fresh salmon (about 1/2 inch thick)
- Sweet butter
- Mushrooms, finely chopped
- 1 clove garlic, finely chopped
- 1 shallot, finely chopped
- 1/2 bay leaf
- Fresh thyme and basil, finely chopped
- Salt
- Whole peppercorns
- Butter (for rubbing paper)
- Breadcrumbs, grated
- Juice of 1 large lemon
- Spanish sauce (optional)
Method
- 1 Steep salmon slices for 1 hour in sweet butter with mushrooms, garlic, shallot, bay leaf, thyme, basil, salt, and pepper.
- 2 Construct a small paper box. Rub the outside with butter and place the seasoned salmon inside, covering it with grated breadcrumbs.
- 3 Bake in a moderate oven (350°F) or place on a stove until the salmon is cooked through.
- 4 Brown the top using a salamander or broiler. Serve immediately with lemon juice squeezed over the top.
