Baked Sage Veal Rolls With Peas

Ingredients

  • 4 veal cutlets
  • 1 cup bread crumbs
  • 2 tbsp melted butter
  • Salt and pepper to taste
  • 1 tsp dried sage (optional)
  • 1 cup hot water or stock
  • 1 lb peas

Method

  1. 1 Preheat oven to 350°F. Mix bread crumbs, melted butter, salt, pepper, and sage if using.
  2. 2 Cut veal cutlets into palm-sized pieces. Place a spoonful of dressing on each piece.
  3. 3 Roll each piece and fasten with a toothpick. Place in a baking pan.
  4. 4 Add hot water or stock to the pan. Cover and bake until cooked through.
  5. 5 Arrange veal rolls on a platter. Fill the center with cooked peas and serve.
