Baked Sage Veal Rolls With Peas
Ingredients
- 4 veal cutlets
- 1 cup bread crumbs
- 2 tbsp melted butter
- Salt and pepper to taste
- 1 tsp dried sage (optional)
- 1 cup hot water or stock
- 1 lb peas
Method
- 1 Preheat oven to 350°F. Mix bread crumbs, melted butter, salt, pepper, and sage if using.
- 2 Cut veal cutlets into palm-sized pieces. Place a spoonful of dressing on each piece.
- 3 Roll each piece and fasten with a toothpick. Place in a baking pan.
- 4 Add hot water or stock to the pan. Cover and bake until cooked through.
- 5 Arrange veal rolls on a platter. Fill the center with cooked peas and serve.
