Baked Rice Stuffed Apples
Ingredients
- 6 bright red apples
- 12 tablespoons cooked rice
- 6 tablespoons cracker crumbs
- 6 tablespoons chopped apples
- 6 tablespoons sugar
- 6 tablespoons seeded raisins
- 6 tablespoons chopped almonds
- 1 egg
- 1 cup milk
- 1/2 teaspoon butter
- Grated rind and juice of 1/2 lemon
- Dash of nutmeg
- 1 cup water
- Sugar for sprinkling
- Whipped cream or custard sauce, for serving
Method
- 1 Cut off the tops of the apples and hollow out the centers, leaving a thin wall to maintain shape.
- 2 Whip the egg, place in a cup, and fill with milk. Stir well.
- 3 Place the egg-milk mixture in a double boiler with butter, lemon rind, lemon juice, and nutmeg. Cook until thickened, then cool.
- 4 Mix the thickened sauce with the rice, cracker crumbs, chopped apples, sugar, raisins, and almonds to create the filling.
- 5 Fill the hollowed apples with the mixture, sprinkle with sugar, and add 1 cup of water to the baking dish.
- 6 Bake in a moderate oven (350°F) until tender. Serve with whipped cream or custard sauce.
