Ingredients

  • 6 bright red apples
  • 12 tablespoons cooked rice
  • 6 tablespoons cracker crumbs
  • 6 tablespoons chopped apples
  • 6 tablespoons sugar
  • 6 tablespoons seeded raisins
  • 6 tablespoons chopped almonds
  • 1 egg
  • 1 cup milk
  • 1/2 teaspoon butter
  • Grated rind and juice of 1/2 lemon
  • Dash of nutmeg
  • 1 cup water
  • Sugar for sprinkling
  • Whipped cream or custard sauce, for serving

Method

  1. 1 Cut off the tops of the apples and hollow out the centers, leaving a thin wall to maintain shape.
  2. 2 Whip the egg, place in a cup, and fill with milk. Stir well.
  3. 3 Place the egg-milk mixture in a double boiler with butter, lemon rind, lemon juice, and nutmeg. Cook until thickened, then cool.
  4. 4 Mix the thickened sauce with the rice, cracker crumbs, chopped apples, sugar, raisins, and almonds to create the filling.
  5. 5 Fill the hollowed apples with the mixture, sprinkle with sugar, and add 1 cup of water to the baking dish.
