Baked Rice Ring With Carrot Purée
Ingredients
- 1 cup rice
- 6 medium carrots
- 2 oz butter
- 1 tbsp finely chopped parsley
- 2 tsp wheat flour
- salt and pepper to taste
- breadcrumbs
Method
- 1 Boil rice in 1 quart water until tender, then drain and dry.
- 2 Slice carrots and stew in 1 pint water and 1 oz butter until tender.
- 3 Thicken carrots with wheat flour, then add salt, pepper, and parsley.
- 4 Arrange rice in a ring on a dish and pile carrots in the center.
- 5 Sprinkle breadcrumbs over the top and dot with remaining butter.
- 6 Bake in a moderate oven (350°F) for 20 minutes.
