Baked Rice Pudding With Seasonal Fruit
Ingredients
- 1 cup rice
- 1 quart milk
- salt to taste
- 1 cup cream
- sugar to taste
- seasonal fruit (cherries, blackberries, apricots, apples, or peaches), cut up and sweetened
- nutmeg for garnish
- cream for serving
Method
- 1 Combine 1 cup rice and 1 quart milk in a pot. Boil very slowly, stirring to prevent burning, until the rice is tender and creamy.
- 2 Remove from heat. Stir in a pinch of salt, 1 cup cream, and sugar to taste.
- 3 Place sweetened, uncooked seasonal fruit in a deep baking dish. Spread the rice mixture roughly over the fruit.
- 4 Bake in a slow oven (300°F) for 2 hours until heated through and set.
- 5 Serve warm or cold, topped with cream and grated nutmeg.
