Baked Rice Pudding With Seasonal Fruit

Ingredients

  • 1 cup rice
  • 1 quart milk
  • salt to taste
  • 1 cup cream
  • sugar to taste
  • seasonal fruit (cherries, blackberries, apricots, apples, or peaches), cut up and sweetened
  • nutmeg for garnish
  • cream for serving

Method

  1. 1 Combine 1 cup rice and 1 quart milk in a pot. Boil very slowly, stirring to prevent burning, until the rice is tender and creamy.
  2. 2 Remove from heat. Stir in a pinch of salt, 1 cup cream, and sugar to taste.
  3. 3 Place sweetened, uncooked seasonal fruit in a deep baking dish. Spread the rice mixture roughly over the fruit.
  4. 4 Bake in a slow oven (300°F) for 2 hours until heated through and set.
  5. 5 Serve warm or cold, topped with cream and grated nutmeg.
