Baked Rice Pudding With Orange Marmalade Meringue
Ingredients
- 1 quart milk
- 1/2 cup rice
- 1 tsp salt
- 4 tbsp sugar
- 1-2 tbsp cream
- Orange marmalade
- Egg whites and sugar (for meringue)
Method
- 1 Simmer rice in milk until soft and thick. Stir in salt, sugar, and cream. Cool for a few minutes.
- 2 Pour mixture into a pudding dish and bake in a moderate oven (350°F) until set.
- 3 Spread a thick layer of orange marmalade over the baked pudding.
- 4 Top with a meringue and return to oven until lightly browned. Serve cold.
