Baked Rice Pudding With Orange Marmalade Meringue

Ingredients

  • 1 quart milk
  • 1/2 cup rice
  • 1 tsp salt
  • 4 tbsp sugar
  • 1-2 tbsp cream
  • Orange marmalade
  • Egg whites and sugar (for meringue)

Method

  1. 1 Simmer rice in milk until soft and thick. Stir in salt, sugar, and cream. Cool for a few minutes.
  2. 2 Pour mixture into a pudding dish and bake in a moderate oven (350°F) until set.
  3. 3 Spread a thick layer of orange marmalade over the baked pudding.
  4. 4 Top with a meringue and return to oven until lightly browned. Serve cold.
