Baked Rice Pudding With Meringue

Ingredients

  • 1 ½ cups milk
  • 1 tablespoon cornstarch
  • 3 cups boiled rice
  • 1 cup sugar
  • 2 egg yolks, beaten

Method

  1. 1 Scald 1 ½ cups milk. Mix cornstarch with a little cold milk, then stir into the hot milk. Cook for a few minutes.
  2. 2 Remove from heat. Stir in 3 cups boiled rice, 1 cup sugar, and 2 beaten egg yolks.
  3. 3 Return to heat and cook, stirring constantly, until thickened.
  4. 4 Turn into a dish. Top with meringue and bake in a moderate oven (350°F) for a few minutes to brown.
