Baked Rice Pudding With Meringue
Ingredients
- 1 ½ cups milk
- 1 tablespoon cornstarch
- 3 cups boiled rice
- 1 cup sugar
- 2 egg yolks, beaten
Method
- 1 Scald 1 ½ cups milk. Mix cornstarch with a little cold milk, then stir into the hot milk. Cook for a few minutes.
- 2 Remove from heat. Stir in 3 cups boiled rice, 1 cup sugar, and 2 beaten egg yolks.
- 3 Return to heat and cook, stirring constantly, until thickened.
- 4 Turn into a dish. Top with meringue and bake in a moderate oven (350°F) for a few minutes to brown.
