Baked Rice Pudding With Jelly Whip

Ingredients

  • 1/2 cup rice
  • 3 cups boiling water
  • 2 cups milk
  • 1 egg yolk
  • 1/2 cup sugar
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 egg white
  • 1/4 cup jelly

Method

  1. 1 Wash 1/2 cup rice in cold water. Place in a saucepan with 3 cups boiling water and cook slowly until water is absorbed.
  2. 2 Transfer rice to a bowl. Mix in 2 cups milk, 1 egg yolk, 1/2 cup sugar, 1/2 teaspoon nutmeg, and 1/2 teaspoon salt. Pour into a greased baking dish.
  3. 3 Bake in a slow oven (300°F) for 35 minutes.
  4. 4 Beat 1 egg white and 1/4 cup jelly until stiff peaks form. Serve as a topping for the warm pudding.
