Baked Rice Pudding With Jelly Whip
Ingredients
- 1/2 cup rice
- 3 cups boiling water
- 2 cups milk
- 1 egg yolk
- 1/2 cup sugar
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 egg white
- 1/4 cup jelly
Method
- 1 Wash 1/2 cup rice in cold water. Place in a saucepan with 3 cups boiling water and cook slowly until water is absorbed.
- 2 Transfer rice to a bowl. Mix in 2 cups milk, 1 egg yolk, 1/2 cup sugar, 1/2 teaspoon nutmeg, and 1/2 teaspoon salt. Pour into a greased baking dish.
- 3 Bake in a slow oven (300°F) for 35 minutes.
- 4 Beat 1 egg white and 1/4 cup jelly until stiff peaks form. Serve as a topping for the warm pudding.
