Baked Rice Pudding With Fried Leftovers

Ingredients

  • 1/2 lb rice
  • 1 pint cream or milk
  • 1/4 lb sugar
  • 2 oz butter
  • 4 eggs
  • 1/4 cup rose water or grated lemon peel
  • grated bread crumbs
  • butter for frying

Method

  1. 1 Wash rice well and boil in cream or milk until soft. Let cool completely.
  2. 2 Stir in sugar, butter, beaten eggs (4 whole, whites of 4 reserved), and rose water or lemon peel. Mix well.
  3. 3 Butter a deep pan and coat with bread crumbs. Pour in mixture and bake at 350°F for 45 minutes.
  4. 4 Slice leftovers and fry in butter, or roll into balls, dip in egg batter, and fry until golden.
