Baked Rice Pudding With Fried Leftovers
Ingredients
- 1/2 lb rice
- 1 pint cream or milk
- 1/4 lb sugar
- 2 oz butter
- 4 eggs
- 1/4 cup rose water or grated lemon peel
- grated bread crumbs
- butter for frying
Method
- 1 Wash rice well and boil in cream or milk until soft. Let cool completely.
- 2 Stir in sugar, butter, beaten eggs (4 whole, whites of 4 reserved), and rose water or lemon peel. Mix well.
- 3 Butter a deep pan and coat with bread crumbs. Pour in mixture and bake at 350°F for 45 minutes.
- 4 Slice leftovers and fry in butter, or roll into balls, dip in egg batter, and fry until golden.
