Baked Rice Flour Pudding With Vanilla
Ingredients
- 1 quart milk
- 7 ounces rice flour
- 4.5 ounces sugar
- 6 eggs
- 1 pinch salt
- 1 teaspoon vanilla extract
- 1 tablespoon butter
Method
- 1 Dissolve rice flour in 1/2 pint of cold milk to prevent lumps.
- 2 Pour the mixture into the remaining boiling milk and cook until thickened.
- 3 Stir in sugar, butter, and salt. Remove from heat and let cool slightly.
- 4 Mix in beaten eggs and vanilla extract.
- 5 Bake in a preheated 350°F oven until set and golden.
- 6 Serve warm.
