Baked Rice Flour Pudding With Vanilla

Ingredients

  • 1 quart milk
  • 7 ounces rice flour
  • 4.5 ounces sugar
  • 6 eggs
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter

Method

  1. 1 Dissolve rice flour in 1/2 pint of cold milk to prevent lumps.
  2. 2 Pour the mixture into the remaining boiling milk and cook until thickened.
  3. 3 Stir in sugar, butter, and salt. Remove from heat and let cool slightly.
  4. 4 Mix in beaten eggs and vanilla extract.
  5. 5 Bake in a preheated 350°F oven until set and golden.
  6. 6 Serve warm.
