Baked Rhubarb Tapioca Pudding With Meringue

Ingredients

  • 1/2 cup pearl tapioca
  • 4 cups cooked and sweetened rhubarb
  • 1 egg white

Method

  1. 1 Wash 1/2 cup pearl tapioca in plenty of water to remove the starch.
  2. 2 Place the tapioca in a glass or earthenware baking dish and add 4 cups of cooked and sweetened rhubarb.
  3. 3 Cook in the oven until the tapioca is transparent or soft.
  4. 4 Place a meringue made from the white of one egg on top.
  5. 5 Cool, and then serve.
