Baked Rhubarb Tapioca Pudding With Meringue
Ingredients
- 1/2 cup pearl tapioca
- 4 cups cooked and sweetened rhubarb
- 1 egg white
Method
- 1 Wash 1/2 cup pearl tapioca in plenty of water to remove the starch.
- 2 Place the tapioca in a glass or earthenware baking dish and add 4 cups of cooked and sweetened rhubarb.
- 3 Cook in the oven until the tapioca is transparent or soft.
- 4 Place a meringue made from the white of one egg on top.
- 5 Cool, and then serve.
