Baked Rhubarb Custard With Meringue
Ingredients
- 4 tbsp Crisco
- 4 tbsp sugar
- 2 eggs
- 1 lemon
- 1/2 cup flour
- 1 cup stewed rhubarb
- 1/2 tsp salt
- breadcrumbs
Method
- 1 Grease a pudding dish with Crisco and dust with breadcrumbs. Place a layer of breadcrumbs at the bottom, then spread the stewed rhubarb on top.
- 2 Beat Crisco and sugar until creamy. Beat in egg yolks, add grated lemon rind, then sift in flour and salt. Spread this mixture over the rhubarb.
- 3 Bake in a moderate oven (350°F) for 20 minutes.
- 4 Beat egg whites to stiff peaks. Add 1 tbsp sifted sugar and 1/2 tsp lemon juice. Drop spoonfuls on top of the pudding and return to oven to brown lightly.
