Baked Rhubarb Custard With Meringue

Ingredients

  • 4 tbsp Crisco
  • 4 tbsp sugar
  • 2 eggs
  • 1 lemon
  • 1/2 cup flour
  • 1 cup stewed rhubarb
  • 1/2 tsp salt
  • breadcrumbs

Method

  1. 1 Grease a pudding dish with Crisco and dust with breadcrumbs. Place a layer of breadcrumbs at the bottom, then spread the stewed rhubarb on top.
  2. 2 Beat Crisco and sugar until creamy. Beat in egg yolks, add grated lemon rind, then sift in flour and salt. Spread this mixture over the rhubarb.
  3. 3 Bake in a moderate oven (350°F) for 20 minutes.
  4. 4 Beat egg whites to stiff peaks. Add 1 tbsp sifted sugar and 1/2 tsp lemon juice. Drop spoonfuls on top of the pudding and return to oven to brown lightly.
