Baked Ravioli With Forcemeat And Parmesan
Ingredients
- 1/4 lb flour
- 2 egg yolks
- 1/2 tsp salt
- 2 oz butter
- forcemeat of fowl, game, or fish
- grated Parmesan cheese
- 1-2 egg yolks
- gravy or stock
Method
- 1 Mix flour, 2 egg yolks, salt, and butter into a firm paste. Wrap in a damp cloth and rest for 30 minutes.
- 2 Roll paste thin, cut into 3-inch circles. Brush edges with water.
- 3 Place forcemeat mixed with Parmesan and egg yolks on each circle. Fold and pinch edges to seal.
- 4 Boil ravioli in stock for 15 minutes. Drain.
- 5 Layer ravioli and Parmesan in a buttered dish. Cover with gravy and bake at 350°F for 25 minutes.
