Baked Ravioli With Forcemeat And Parmesan

Ingredients

  • 1/4 lb flour
  • 2 egg yolks
  • 1/2 tsp salt
  • 2 oz butter
  • forcemeat of fowl, game, or fish
  • grated Parmesan cheese
  • 1-2 egg yolks
  • gravy or stock

Method

  1. 1 Mix flour, 2 egg yolks, salt, and butter into a firm paste. Wrap in a damp cloth and rest for 30 minutes.
  2. 2 Roll paste thin, cut into 3-inch circles. Brush edges with water.
  3. 3 Place forcemeat mixed with Parmesan and egg yolks on each circle. Fold and pinch edges to seal.
  4. 4 Boil ravioli in stock for 15 minutes. Drain.
  5. 5 Layer ravioli and Parmesan in a buttered dish. Cover with gravy and bake at 350°F for 25 minutes.
