Baked Quince Pie With Syrup

Ingredients

  • Quinces, cored and peeled
  • Fine sugar (equal weight to quinces)
  • Water (1 pint per pound of sugar)
  • Additional fine sugar for topping

Method

  1. 1 Prepare a syrup by boiling equal weight of sugar and water (1 pint water per pound sugar) in a preserving pan until it reaches syrup consistency, skimming as needed.
  2. 2 Add the cored and peeled quinces to the syrup and boil until they are well colored.
  3. 3 Remove quinces and let them cool completely.
  4. 4 Place the cooled quinces whole, halved, or quartered into a pie dish or tart pan with a cut cover.
  5. 5 Sprinkle additional fine sugar over the quinces before baking.
  6. 6 Bake the pie until done.
  7. 7 Pour the reserved syrup over the baked pie.
  8. 8 Ice the top of the pie.
