Baked Quince Pie With Syrup
Ingredients
- Quinces, cored and peeled
- Fine sugar (equal weight to quinces)
- Water (1 pint per pound of sugar)
- Additional fine sugar for topping
Method
- 1 Prepare a syrup by boiling equal weight of sugar and water (1 pint water per pound sugar) in a preserving pan until it reaches syrup consistency, skimming as needed.
- 2 Add the cored and peeled quinces to the syrup and boil until they are well colored.
- 3 Remove quinces and let them cool completely.
- 4 Place the cooled quinces whole, halved, or quartered into a pie dish or tart pan with a cut cover.
- 5 Sprinkle additional fine sugar over the quinces before baking.
- 6 Bake the pie until done.
- 7 Pour the reserved syrup over the baked pie.
- 8 Ice the top of the pie.
