Baked Quince Custard Pie With Lozenge Crust

Ingredients

  • 12 quinces, quartered or sliced
  • 1 lb sugar
  • ¼ lb butter
  • 1 cup cream
  • 2 egg yolks, beaten

Method

  1. 1 Place fruit quarters or slices in a pie dish. Add sugar and butter.
  2. 2 Cover and bake at 350°F until fruit is tender.
  3. 3 Remove from oven, mash the fruit, and stir in cream and beaten egg yolks.
  4. 4 Return to oven briefly to set, then cut the top crust into lozenges and sprinkle with sugar.
