Baked Quince Custard Pie With Lozenge Crust
Ingredients
- 12 quinces, quartered or sliced
- 1 lb sugar
- ¼ lb butter
- 1 cup cream
- 2 egg yolks, beaten
Method
- 1 Place fruit quarters or slices in a pie dish. Add sugar and butter.
- 2 Cover and bake at 350°F until fruit is tender.
- 3 Remove from oven, mash the fruit, and stir in cream and beaten egg yolks.
- 4 Return to oven briefly to set, then cut the top crust into lozenges and sprinkle with sugar.
