Baked Pumpkin Pie With Molasses
Ingredients
- 2 ½ cups pumpkin pulp
- 2 cups milk
- 1 tsp salt
- 1 tsp butter
- 1 tsp cinnamon
- 1 tsp ginger
- 1 tbsp molasses
- 2 eggs
- sugar to taste
- 1 open pie crust
Method
- 1 Cut pumpkin into small pieces, remove seeds and soft parts. Cover and cook slowly in own steam until tender.
- 2 Remove cover and reduce pumpkin almost to dryness, being careful not to burn. Press through a colander.
- 3 To 2 ½ cups pumpkin pulp, add 2 cups milk, 1 tsp each salt, butter, cinnamon, and ginger, 1 tbsp molasses, and sugar to taste.
- 4 Add beaten eggs last, ensuring the mixture is cold. Pour into an open pie crust.
- 5 Bake in a slow oven (300°F) for 40 to 50 minutes.
