Baked Pumpkin Custard
Ingredients
- 11 1/2 cups steamed pumpkin, drained dry
- 1 cup milk
- 1 egg yolk
- 1/2 cup sugar
- 1 teaspoon melted butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 teaspoons vanilla
Method
- 1 In a bowl, beat together the pumpkin, milk, egg yolk, sugar, butter, cinnamon, nutmeg, and vanilla until thoroughly mixed.
- 2 Pour the mixture into well-greased custard cups.
- 3 Place the cups in a baking pan and pour in enough boiling water to half-fill the pan.
- 4 Bake in a moderate oven (350°F) for 45 minutes.
- 5 Remove from oven and serve cold, garnished with fruit whip or jelly if desired.
