Baked Pumpkin Custard

Ingredients

  • 11 1/2 cups steamed pumpkin, drained dry
  • 1 cup milk
  • 1 egg yolk
  • 1/2 cup sugar
  • 1 teaspoon melted butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoons vanilla

Method

  1. 1 In a bowl, beat together the pumpkin, milk, egg yolk, sugar, butter, cinnamon, nutmeg, and vanilla until thoroughly mixed.
  2. 2 Pour the mixture into well-greased custard cups.
  3. 3 Place the cups in a baking pan and pour in enough boiling water to half-fill the pan.
  4. 4 Bake in a moderate oven (350°F) for 45 minutes.
  5. 5 Remove from oven and serve cold, garnished with fruit whip or jelly if desired.
