Baked Pumpkin Custard With Meringue
Ingredients
- 2 cups pumpkin, sieved
- 1 cup soft bread crumbs
- 2 eggs, separated
- 1½ cups milk
- 1 cup sugar
- 3 tablespoons butter, melted
- ¼ teaspoon salt
- 1 teaspoon orange flavoring
- 2 tablespoons sugar (for egg whites)
Method
- 1 Combine pumpkin, bread crumbs, egg yolks, milk, 1 cup sugar, butter, salt, and orange flavoring. Mix well after each addition.
- 2 Pour mixture into a baking dish or custard cups.
- 3 Bake in a slow oven (300°F) until the mixture thickens and browns.
- 4 Beat egg whites with 2 tablespoons sugar until stiff peaks form.
- 5 Spread meringue on top of the custard and brown lightly.
