Baked Pumpkin Custard With Meringue

Ingredients

  • 2 cups pumpkin, sieved
  • 1 cup soft bread crumbs
  • 2 eggs, separated
  • 1½ cups milk
  • 1 cup sugar
  • 3 tablespoons butter, melted
  • ¼ teaspoon salt
  • 1 teaspoon orange flavoring
  • 2 tablespoons sugar (for egg whites)

Method

  1. 1 Combine pumpkin, bread crumbs, egg yolks, milk, 1 cup sugar, butter, salt, and orange flavoring. Mix well after each addition.
  2. 2 Pour mixture into a baking dish or custard cups.
  3. 3 Bake in a slow oven (300°F) until the mixture thickens and browns.
  4. 4 Beat egg whites with 2 tablespoons sugar until stiff peaks form.
  5. 5 Spread meringue on top of the custard and brown lightly.
