Baked Prune Sponge Cake

Ingredients

  • 3 eggs
  • ½ cup sugar
  • ½ tsp vanilla extract
  • ¾ cup flour
  • 1 tsp baking powder
  • 15 prunes, soaked, pitted, and chopped
  • ½ cup sugar (for prunes)
  • Juice of ½ lemon
  • Butter for greasing dish

Method

  1. 1 Beat three eggs separately and mix them together.
  2. 2 Stir in half a cup of sugar, half a teaspoon of vanilla, and three-fourths cup of flour sifted with one teaspoon of baking powder.
  3. 3 Soak, pit, and finely chop fifteen prunes. Toss with half a cup of sugar and the juice of half a lemon.
  4. 4 Place the prunes in a buttered baking dish and cover with the batter.
  5. 5 Bake for 20 to 25 minutes.
