Baked Prune Sponge Cake
Ingredients
- 3 eggs
- ½ cup sugar
- ½ tsp vanilla extract
- ¾ cup flour
- 1 tsp baking powder
- 15 prunes, soaked, pitted, and chopped
- ½ cup sugar (for prunes)
- Juice of ½ lemon
- Butter for greasing dish
Method
- 1 Beat three eggs separately and mix them together.
- 2 Stir in half a cup of sugar, half a teaspoon of vanilla, and three-fourths cup of flour sifted with one teaspoon of baking powder.
- 3 Soak, pit, and finely chop fifteen prunes. Toss with half a cup of sugar and the juice of half a lemon.
- 4 Place the prunes in a buttered baking dish and cover with the batter.
- 5 Bake for 20 to 25 minutes.
