Baked Prune Souffle With Almonds
Ingredients
- ½ pound prunes
- 3 tablespoons powdered sugar
- 4 eggs
- 1 teaspoon vanilla
- Dash of salt
- Chopped almonds or prune-pit meats (optional)
Method
- 1 Stew prunes, drain, remove stones, and cut each into four pieces.
- 2 Beat egg yolks and sugar until creamy, then mix in vanilla and prunes.
- 3 Whip egg whites with a dash of salt to stiff peaks.
- 4 Fold whipped egg whites gently into the prune mixture.
- 5 Pour into a pudding dish and bake in a moderate oven (350°F) for 20 minutes.
- 6 Serve immediately after removing from the oven.
