Baked Prune Soufflé

Ingredients

  • 3/4 lb prunes
  • 1/2 cup granulated sugar
  • 3 egg whites

Method

  1. 1 Soak prunes in water overnight. Cook until soft in the soaking water, then drain.
  2. 2 Remove stones and press the prunes through a sieve to create a purée.
  3. 3 Mix the purée with sugar and gently fold in egg whites beaten to stiff peaks.
  4. 4 Pour into a pudding dish and bake for 20 minutes.
  5. 5 Serve cold in the baking dish with cream.
