Baked Prune Soufflé
Ingredients
- 3/4 lb prunes
- 1/2 cup granulated sugar
- 3 egg whites
Method
- 1 Soak prunes in water overnight. Cook until soft in the soaking water, then drain.
- 2 Remove stones and press the prunes through a sieve to create a purée.
- 3 Mix the purée with sugar and gently fold in egg whites beaten to stiff peaks.
- 4 Pour into a pudding dish and bake for 20 minutes.
- 5 Serve cold in the baking dish with cream.
