Baked Prune Custard With Almond
Ingredients
- 1 lb prunes or French plums
- 4 eggs
- 1 pint milk
- 1 teaspoon cornstarch
- sugar to taste
- almond extract to taste
Method
- 1 Wash prunes, remove stones, and soak in 1/2 pint water overnight.
- 2 Stew prunes gently in soaking water until tender, adding more water if needed.
- 3 Mash prunes well and let them cool completely.
- 4 Beat egg whites to stiff peaks and fold into the cooled prunes.
- 5 Make custard by heating milk, cornstarch, and egg yolks with sugar and almond extract.
- 6 Let custard cool, then heap prunes on a dish and pour custard around them.
