Baked Potato Yeast Rolls

Ingredients

  • 2 large baked potatoes
  • 1 cup melted butter
  • 2 eggs, well beaten
  • ½ cake compressed yeast, dissolved
  • 2 cups sifted flour (divided)

Method

  1. 1 Rub hot baked potatoes through a colander into a bowl.
  2. 2 Stir in melted butter, beaten eggs, dissolved yeast, and 1 cup flour. Mix into a smooth sponge.
  3. 3 Let rise for 3 hours.
  4. 4 Work in 2 more cups of flour. Let rise for 5 hours.
  5. 5 Knead, shape into rolls, and let rise for 2 hours.
  6. 6 Bake in a moderate oven (350°F) until done.
