Baked Potato Yeast Rolls
Ingredients
- 2 large baked potatoes
- 1 cup melted butter
- 2 eggs, well beaten
- ½ cake compressed yeast, dissolved
- 2 cups sifted flour (divided)
Method
- 1 Rub hot baked potatoes through a colander into a bowl.
- 2 Stir in melted butter, beaten eggs, dissolved yeast, and 1 cup flour. Mix into a smooth sponge.
- 3 Let rise for 3 hours.
- 4 Work in 2 more cups of flour. Let rise for 5 hours.
- 5 Knead, shape into rolls, and let rise for 2 hours.
- 6 Bake in a moderate oven (350°F) until done.
