Baked Potato Roses
Ingredients
- 2 cups mashed potatoes, well-seasoned
- 2 egg yolks
- 1 egg white
- 1 egg, beaten (for brushing)
- Butter
Method
- 1 Beat the egg yolks and white into the well-seasoned mashed potatoes until well combined.
- 2 Place the mixture in a pastry bag fitted with a star-shaped tip.
- 3 Pipe the potato onto a baking sheet in circular, rose-like shapes, winding from the outside to a center point.
- 4 Lightly brush the edges with beaten egg and place a small piece of butter on each rose.
- 5 Bake in a moderate oven (350°F) for a few minutes until the edges are lightly browned.
