Ingredients

  • 2 cups mashed potatoes, well-seasoned
  • 2 egg yolks
  • 1 egg white
  • 1 egg, beaten (for brushing)
  • Butter

Method

  1. 1 Beat the egg yolks and white into the well-seasoned mashed potatoes until well combined.
  2. 2 Place the mixture in a pastry bag fitted with a star-shaped tip.
  3. 3 Pipe the potato onto a baking sheet in circular, rose-like shapes, winding from the outside to a center point.
  4. 4 Lightly brush the edges with beaten egg and place a small piece of butter on each rose.
  5. 5 Bake in a moderate oven (350°F) for a few minutes until the edges are lightly browned.
