Baked Potato Puffs With Beef Extract

Ingredients

  • 4 large potatoes
  • Butter, to taste
  • Salt, to taste
  • White pepper, to taste
  • 1/2 tsp extract of beef
  • 1 egg white, stiffly beaten

Method

  1. 1 Bake potatoes until tender, then press through a potato ricer into a bowl.
  2. 2 Season with butter, salt, white pepper, and extract of beef. Mix well.
  3. 3 Fold in the stiffly beaten egg white until fully incorporated.
  4. 4 Mold the mixture into cakes and place on a buttered baking sheet.
  5. 5 Bake in a hot oven (425°F) until golden brown. Serve garnished with cress or parsley.
