Baked Potato Puffs With Beef Extract
Ingredients
- 4 large potatoes
- Butter, to taste
- Salt, to taste
- White pepper, to taste
- 1/2 tsp extract of beef
- 1 egg white, stiffly beaten
Method
- 1 Bake potatoes until tender, then press through a potato ricer into a bowl.
- 2 Season with butter, salt, white pepper, and extract of beef. Mix well.
- 3 Fold in the stiffly beaten egg white until fully incorporated.
- 4 Mold the mixture into cakes and place on a buttered baking sheet.
- 5 Bake in a hot oven (425°F) until golden brown. Serve garnished with cress or parsley.
