  • milk
  • 4 egg yolks
  • sugar
  • 4 egg whites

Method

  1. 1 Boil potatoes until tender, then mash and pass through a sieve.
  2. 2 Mix mashed potatoes with milk and let the mixture cool completely.
  3. 3 Stir in egg yolks and sugar until combined.
  4. 4 Beat egg whites to stiff peaks, then gently fold them into the potato mixture.
