Baked Potato Pudding
Ingredients
- 3-4 potatoes
- milk
- 4 egg yolks
- sugar
- 4 egg whites
Method
- 1 Boil potatoes until tender, then mash and pass through a sieve.
- 2 Mix mashed potatoes with milk and let the mixture cool completely.
- 3 Stir in egg yolks and sugar until combined.
- 4 Beat egg whites to stiff peaks, then gently fold them into the potato mixture.
- 5 Pour into a mold and bake.
