Baked Potato Pudding With Lemon Peel
Ingredients
- 3 lbs potatoes
- 2 quarts milk
- 2 oz butter
- 2 oz sugar
- Lemon peel
- 1 pinch salt
- 3 eggs
Method
- 1 Bake, steam, or boil potatoes until tender.
- 2 Scoop out the pulp and beat vigorously with a fork.
- 3 Add milk, butter, sugar, lemon peel, and salt to the potatoes.
- 4 Stir the mixture over heat until it comes to a boil.
- 5 Remove from heat and stir in beaten eggs.
- 6 Pour into a greased pie dish and bake for 1 hour.
