  • 3 lbs potatoes
  • 2 quarts milk
  • 2 oz butter
  • 2 oz sugar
  • Lemon peel
  • 1 pinch salt
  • 3 eggs

Method

  1. 1 Bake, steam, or boil potatoes until tender.
  2. 2 Scoop out the pulp and beat vigorously with a fork.
  3. 3 Add milk, butter, sugar, lemon peel, and salt to the potatoes.
  4. 4 Stir the mixture over heat until it comes to a boil.
  5. 5 Remove from heat and stir in beaten eggs.
  6. 6 Pour into a greased pie dish and bake for 1 hour.
