Baked Potato Pudding With Cinnamon

Ingredients

  • 1.5 lb mealy potatoes
  • 5.5 oz sugar
  • 1.5 oz butter
  • 1 tbsp flour
  • 0.5 pint milk
  • 6 eggs
  • 1 pinch salt
  • Cinnamon or lemon peel to taste

Method

  1. 1 Boil or steam potatoes, then peel and rub through a sieve.
  2. 2 Return potatoes to heat with butter, flour, and milk, stirring constantly until smooth.
  3. 3 Stir in sugar, salt, and cinnamon or lemon peel. Remove from heat and let cool slightly.
  4. 4 Mix in egg yolks, then fold in beaten egg whites.
  5. 5 Bake in a moderate oven (350°F) until set and serve hot.
