Baked Potato Pudding With Cinnamon
Ingredients
- 1.5 lb mealy potatoes
- 5.5 oz sugar
- 1.5 oz butter
- 1 tbsp flour
- 0.5 pint milk
- 6 eggs
- 1 pinch salt
- Cinnamon or lemon peel to taste
Method
- 1 Boil or steam potatoes, then peel and rub through a sieve.
- 2 Return potatoes to heat with butter, flour, and milk, stirring constantly until smooth.
- 3 Stir in sugar, salt, and cinnamon or lemon peel. Remove from heat and let cool slightly.
- 4 Mix in egg yolks, then fold in beaten egg whites.
- 5 Bake in a moderate oven (350°F) until set and serve hot.
