Baked Potato Dinner Rolls

Ingredients

  • 4 cups flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 7 teaspoons baking powder
  • 2 medium cold boiled potatoes
  • 1 ½ cups water or milk
  • melted shortening

Method

  1. 1 Sift together flour, salt, sugar, and baking powder.
  2. 2 Rub in the cold boiled potatoes or pass them through a ricer.
  3. 3 Add 1 ½ cups water or milk to mix into a stiff batter or soft dough.
  4. 4 Divide into small pieces, knead each, and shape into rolls.
  5. 5 Place on a greased pan, brush with melted shortening, and let rise in a warm place for 15-20 minutes.
  6. 6 Bake in a hot oven (425°F). Brush again with shortening when nearly done.
