Baked Potato Dinner Rolls
Ingredients
- 4 cups flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 7 teaspoons baking powder
- 2 medium cold boiled potatoes
- 1 ½ cups water or milk
- melted shortening
Method
- 1 Sift together flour, salt, sugar, and baking powder.
- 2 Rub in the cold boiled potatoes or pass them through a ricer.
- 3 Add 1 ½ cups water or milk to mix into a stiff batter or soft dough.
- 4 Divide into small pieces, knead each, and shape into rolls.
- 5 Place on a greased pan, brush with melted shortening, and let rise in a warm place for 15-20 minutes.
- 6 Bake in a hot oven (425°F). Brush again with shortening when nearly done.
