Baked Potato Croquettes
Ingredients
- 1 pint hot mashed potatoes
- Salt to taste
- Pepper to taste
- Celery salt to taste
- Minced parsley
- Butter
- Onion juice (optional)
- 1 egg, beaten
Method
- 1 Season the hot mashed potatoes with salt, pepper, celery salt, minced parsley, and butter.
- 2 Add a little onion juice if desired, or a beaten egg yolk.
- 3 Moisten with a little milk or cream and add half of a beaten egg if the yolk was not used.
- 4 Shape the mixture into smooth round balls.
- 5 Brush the balls with the remainder of the beaten egg.
- 6 Bake on a buttered tin until brown, or dip in egg and crumbs and fry in deep fat.
