Baked Potato Croquettes

Ingredients

  • 1 pint hot mashed potatoes
  • Salt to taste
  • Pepper to taste
  • Celery salt to taste
  • Minced parsley
  • Butter
  • Onion juice (optional)
  • 1 egg, beaten

Method

  1. 1 Season the hot mashed potatoes with salt, pepper, celery salt, minced parsley, and butter.
  2. 2 Add a little onion juice if desired, or a beaten egg yolk.
  3. 3 Moisten with a little milk or cream and add half of a beaten egg if the yolk was not used.
  4. 4 Shape the mixture into smooth round balls.
  5. 5 Brush the balls with the remainder of the beaten egg.
  6. 6 Bake on a buttered tin until brown, or dip in egg and crumbs and fry in deep fat.
