Baked Pork Loin With Potatoes And Carrots
Ingredients
- 2 cups onions, cut in wedges (about 1/2 pound or 2 medium)
- 2 cups potatoes, diced (about 12 ounces or 2 medium)
- 2 cups baby carrots (or 3/4 pound regular carrots, sliced)
- 2 tablespoons vegetable oil (divided)
- 1 1/4 pounds pork loin
- 1 tablespoon brown sugar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
Method
- 1 Preheat oven to 400°F.
- 2 In a bowl, mix onions, potatoes, carrots, 1 tablespoon oil, salt, and pepper.
- 3 Arrange veggies around the edge of a 9x13-inch pan and place in the oven.
- 4 Mix brown sugar, garlic powder, 1/2 teaspoon pepper, and 1/4 teaspoon salt to make a rub.
- 5 Sprinkle rub over pork loin and press gently to adhere.
- 6 Heat remaining oil in a skillet over medium-high heat. Brown pork loin on all sides, about 2-3 minutes per side.
- 7 Transfer pork to center of pan with veggies. Bake for 40 minutes until internal temperature reaches 145°F.
- 8 Remove from oven and let rest for 5 minutes before slicing and serving.
