Baked Pork Chops With Peppers And Onions

Ingredients

  • 6 pork chops (lean center-cut, 1/2-inch thick)
  • 1/2 medium onion, thinly sliced
  • 1/2 cup green pepper, chopped
  • 1/8 teaspoon red pepper, chopped
  • 1/4 teaspoon black pepper
  • salt to taste
  • fresh parsley for garnish

Method

  1. 1 Preheat oven to 375°F. Trim fat from pork chops and place them in a 13x9-inch baking pan.
  2. 2 Spread sliced onion and chopped peppers over the chops. Sprinkle with black pepper and salt.
  3. 3 Refrigerate the pan for 1 hour to allow flavors to meld.
  4. 4 Cover the pan and bake for 30 minutes.
  5. 5 Uncover, turn chops, re-cover with vegetables, and bake for 15 more minutes until internal temperature reaches 145°F.
