Baked Pork Chops With Peppers And Onions
Ingredients
- 6 pork chops (lean center-cut, 1/2-inch thick)
- 1/2 medium onion, thinly sliced
- 1/2 cup green pepper, chopped
- 1/8 teaspoon red pepper, chopped
- 1/4 teaspoon black pepper
- salt to taste
- fresh parsley for garnish
Method
- 1 Preheat oven to 375°F. Trim fat from pork chops and place them in a 13x9-inch baking pan.
- 2 Spread sliced onion and chopped peppers over the chops. Sprinkle with black pepper and salt.
- 3 Refrigerate the pan for 1 hour to allow flavors to meld.
- 4 Cover the pan and bake for 30 minutes.
- 5 Uncover, turn chops, re-cover with vegetables, and bake for 15 more minutes until internal temperature reaches 145°F.
- 6 Garnish with fresh parsley before serving.
