Baked Polenta With Sausage And Cheese
Ingredients
- 1 cup yellow cornmeal
- Water
- Salt
- Several whole sausages
- Brown stock or tomato sauce
- Grated cheese
- Butter
Method
- 1 Cook cornmeal in water with salt to make a stiff mush. Spread onto a board to cool until half an inch thick, then cut into small squares.
- 2 Cook whole sausages in a little water. Remove skins, crush the meat, and mix with brown stock or tomato sauce.
- 3 Layer polenta squares in a fireproof dish. Top with grated cheese, crushed sausage mixture, and a piece of butter. Bake in a moderate oven (350°F) until hot.
