Baked Polenta With Sausage And Cheese

Ingredients

  • 1 cup yellow cornmeal
  • Water
  • Salt
  • Several whole sausages
  • Brown stock or tomato sauce
  • Grated cheese
  • Butter

Method

  1. 1 Cook cornmeal in water with salt to make a stiff mush. Spread onto a board to cool until half an inch thick, then cut into small squares.
  2. 2 Cook whole sausages in a little water. Remove skins, crush the meat, and mix with brown stock or tomato sauce.
  3. 3 Layer polenta squares in a fireproof dish. Top with grated cheese, crushed sausage mixture, and a piece of butter. Bake in a moderate oven (350°F) until hot.
