Baked Polenta Casserole With Meat Sauce

Ingredients

  • cornmeal
  • milk
  • salt
  • butter
  • ¼ lb round steak
  • slice of pork or bacon
  • one small carrot
  • ¼ onion
  • one large piece celery
  • ½ tbsp flour
  • hot water or broth
  • cornstarch
  • grated cheese

Method

  1. 1 Cook cornmeal in milk to make a stiff mush. Salt well, spread 1 inch thick on a board, and let cool.
  2. 2 Cut cooled polenta into diamonds or squares. Place a layer in a buttered baking dish.
  3. 3 Brown chopped meat and vegetables in butter. Add flour, then broth; simmer 30-60 minutes until thick.
  4. 4 Make a white sauce using milk, cornstarch, and butter.
  5. 5 Layer polenta, cheese, white sauce, and meat sauce in the dish. Repeat layers.
  6. 6 Bake until the top is nicely browned.
