Baked Plum Custard

Ingredients

  • Plums, apricots, or similar fruit
  • Sugar
  • White wine, sack, claret, or rose water
  • Pastry paste
  • Cream
  • Eggs (optional)
  • Sugar for topping

Method

  1. 1 Place plums or apricots in a dish with sugar and a splash of wine or rose water.
  2. 2 Cover the dish with pastry paste to seal it, then bake until the fruit is tender.
  3. 3 Remove from oven and let cool completely.
  4. 4 Prepare a custard by boiling cream with eggs (or use plain cream).
  5. 5 Pour the cream over the cold fruit and sprinkle with additional sugar before serving.
