Baked Pike With Sour Cream Sauce
Ingredients
- 4 lb pike, cut into steaks, skinned and deboned
- 2 small onions, chopped
- 2 bay leaves
- Salt and cayenne pepper to taste
- 1 cup sour cream
- Breadcrumbs
- Butter, for dotting
- Fish stock
- 1 tbsp butter
- 1 tbsp flour
- Lemon juice
- Fresh parsley, minced
Method
- 1 Preheat oven to 350°F. Place pike steaks, chopped onions, and bay leaves in a buttered baking dish. Season with salt and cayenne.
- 2 Pour sour cream over the fish. Bake until the fish is cooked through, approximately 20-30 minutes.
- 3 Transfer fish to a serving dish. Cover with breadcrumbs and small dots of butter. Brown under the broiler or in a hot oven.
- 4 Pour pan juices into a saucepan. Add enough stock to make 1 cup of liquid. Whisk in butter and flour to thicken.
- 5 Season the sauce with salt and a dash of lemon juice. Pour around the fish, sprinkle with minced parsley, and serve.
