Baked Pike With Sour Cream Sauce

Ingredients

  • 4 lb pike, cut into steaks, skinned and deboned
  • 2 small onions, chopped
  • 2 bay leaves
  • Salt and cayenne pepper to taste
  • 1 cup sour cream
  • Breadcrumbs
  • Butter, for dotting
  • Fish stock
  • 1 tbsp butter
  • 1 tbsp flour
  • Lemon juice
  • Fresh parsley, minced

Method

  1. 1 Preheat oven to 350°F. Place pike steaks, chopped onions, and bay leaves in a buttered baking dish. Season with salt and cayenne.
  2. 2 Pour sour cream over the fish. Bake until the fish is cooked through, approximately 20-30 minutes.
  3. 3 Transfer fish to a serving dish. Cover with breadcrumbs and small dots of butter. Brown under the broiler or in a hot oven.
  4. 4 Pour pan juices into a saucepan. Add enough stock to make 1 cup of liquid. Whisk in butter and flour to thicken.
  5. 5 Season the sauce with salt and a dash of lemon juice. Pour around the fish, sprinkle with minced parsley, and serve.
