Baked Penne With Tomato Cheese Sauce

Ingredients

  • 1 cup whole grain pasta (shell, penne, or ziti)
  • 2 tablespoons chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 can (14.5 ounces) diced tomatoes, unsalted
  • 1/2 teaspoon basil (fresh or dried)
  • 1/2 teaspoon oregano
  • 1/4 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1/4 cup part-skim mozzarella, shredded
  • 1 tablespoon Parmesan cheese, grated

Method

  1. 1 Cook pasta according to package directions; drain.
  2. 2 In a saucepan, cook onion and garlic in oil until tender. Stir in tomatoes, basil, oregano, sugar, and pepper. Simmer uncovered for 15 minutes.
  3. 3 Add pasta to sauce. Transfer to a greased 1-quart baking dish. Top with mozzarella and Parmesan.
  4. 4 Bake at 375°F for 10 to 15 minutes until cheese is melted.
