Baked Peanut Butter Carrot Oat Bars
Ingredients
- 1 cup honey
- 1 cup peanut butter
- 3 1/2 cups rolled oats
- 1/2 cup raisins
- 1/2 cup grated carrot
- 1/2 cup coconut
Method
- 1 Preheat oven to 350°F.
- 2 Peel and grate the carrots.
- 3 Heat honey and peanut butter in a saucepan over low heat until melted.
- 4 Remove from heat and stir in oats, raisins, carrots, and coconut.
- 5 Let mixture cool until safe to touch, then press firmly into a 9x13 inch pan.
- 6 Bake for 25 minutes, then cut into 24 bars.
