Baked Peach Rice Pudding
Ingredients
- ½ cup rice
- 2½ cups milk
- 1 cup sugar
- Pinch of salt
- Stewed or preserved peaches
- Butter
- Sugar for sprinkling
- Spice (e.g., cinnamon or nutmeg)
Method
- 1 Wash ½ cup rice and soak in cold water for two hours. Drain.
- 2 Cook rice in a double boiler with 2½ cups milk, 1 cup sugar, and a pinch of salt for two hours.
- 3 Layer the cooked rice and stewed or preserved peaches in a buttered baking dish, ending with rice on top.
- 4 Dot with butter, sprinkle with sugar and spice, then bake until browned.
- 5 Serve hot or cold with any preferred sauce.
