Baked Peach Rice Pudding

Ingredients

  • ½ cup rice
  • 2½ cups milk
  • 1 cup sugar
  • Pinch of salt
  • Stewed or preserved peaches
  • Butter
  • Sugar for sprinkling
  • Spice (e.g., cinnamon or nutmeg)

Method

  1. 1 Wash ½ cup rice and soak in cold water for two hours. Drain.
  2. 2 Cook rice in a double boiler with 2½ cups milk, 1 cup sugar, and a pinch of salt for two hours.
  3. 3 Layer the cooked rice and stewed or preserved peaches in a buttered baking dish, ending with rice on top.
  4. 4 Dot with butter, sprinkle with sugar and spice, then bake until browned.
  5. 5 Serve hot or cold with any preferred sauce.
