Baked Peach Custard With Meringue
Ingredients
- 3 cups milk
- 2 tablespoons cornstarch
- 1 tablespoon cold milk
- 1 tablespoon butter
- 3 egg yolks
- 1 cup sugar
- 1 can peaches
- meringue topping
Method
- 1 Thicken 3 cups boiling milk with 2 tablespoons cornstarch mixed with 1 tablespoon cold milk. Cook, stirring constantly, until smooth and thick.
- 2 Remove from heat. Stir in 1 tablespoon butter and 3 egg yolks beaten with 1 cup sugar.
- 3 Drain a can of peaches and place them in a baking dish. Pour the custard mixture over the peaches.
- 4 Bake for 10 minutes. Top with meringue and return to the oven until the meringue is browned.
