Baked Peach Custard With Meringue

Ingredients

  • 3 cups milk
  • 2 tablespoons cornstarch
  • 1 tablespoon cold milk
  • 1 tablespoon butter
  • 3 egg yolks
  • 1 cup sugar
  • 1 can peaches
  • meringue topping

Method

  1. 1 Thicken 3 cups boiling milk with 2 tablespoons cornstarch mixed with 1 tablespoon cold milk. Cook, stirring constantly, until smooth and thick.
  2. 2 Remove from heat. Stir in 1 tablespoon butter and 3 egg yolks beaten with 1 cup sugar.
  3. 3 Drain a can of peaches and place them in a baking dish. Pour the custard mixture over the peaches.
  4. 4 Bake for 10 minutes. Top with meringue and return to the oven until the meringue is browned.
