Baked Peach Crumb Pudding
Ingredients
- 1 egg yolk
- 1 cup brown sugar
- 2 tbsp shortening
- 2 cups bread crumbs
- 2 cups stewed peaches
- ½ cup flour
- 1 tbsp baking powder
- ½ tsp nutmeg
- butter or oil for greasing dish
Method
- 1 Grease a baking dish thoroughly and dust with bread crumbs.
- 2 In a mixing bowl, combine egg yolk and brown sugar. Add shortening, bread crumbs, stewed peaches, flour, baking powder, and nutmeg. Mix thoroughly.
- 3 Pour mixture into the prepared baking dish.
- 4 Bake in a slow oven (300°F) for 35 minutes.
- 5 Let cool slightly before turning out of the mold.
