Baked Peach Crumb Pudding

Ingredients

  • 1 egg yolk
  • 1 cup brown sugar
  • 2 tbsp shortening
  • 2 cups bread crumbs
  • 2 cups stewed peaches
  • ½ cup flour
  • 1 tbsp baking powder
  • ½ tsp nutmeg
  • butter or oil for greasing dish

Method

  1. 1 Grease a baking dish thoroughly and dust with bread crumbs.
  2. 2 In a mixing bowl, combine egg yolk and brown sugar. Add shortening, bread crumbs, stewed peaches, flour, baking powder, and nutmeg. Mix thoroughly.
  3. 3 Pour mixture into the prepared baking dish.
  4. 4 Bake in a slow oven (300°F) for 35 minutes.
  5. 5 Let cool slightly before turning out of the mold.
