Baked Peach Brown Sugar Dumplings

Ingredients

  • 2 cups flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tbsp sugar
  • ½ cup shortening
  • ¼ cup ice-cold water
  • Pared and stoned peaches
  • 2 tbsp brown sugar per dumpling
  • ½ tsp nutmeg per dumpling

Method

  1. 1 Sift together flour, salt, baking powder, and sugar. Rub in shortening until mixture resembles coarse crumbs.
  2. 2 Mix in ice-cold water to form a dough. Wrap and refrigerate for one hour.
  3. 3 Roll dough to 1/8-inch thickness and cut into 4-inch squares.
  4. 4 Place peaches on squares with brown sugar and nutmeg. Brush edges with water and fold pastry over filling.
  5. 5 Place dumplings on a greased baking sheet. Add ½ cup water to the pan and bake at 350°F for 30 minutes.
