Baked Peach Brown Sugar Dumplings
Ingredients
- 2 cups flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tbsp sugar
- ½ cup shortening
- ¼ cup ice-cold water
- Pared and stoned peaches
- 2 tbsp brown sugar per dumpling
- ½ tsp nutmeg per dumpling
Method
- 1 Sift together flour, salt, baking powder, and sugar. Rub in shortening until mixture resembles coarse crumbs.
- 2 Mix in ice-cold water to form a dough. Wrap and refrigerate for one hour.
- 3 Roll dough to 1/8-inch thickness and cut into 4-inch squares.
- 4 Place peaches on squares with brown sugar and nutmeg. Brush edges with water and fold pastry over filling.
- 5 Place dumplings on a greased baking sheet. Add ½ cup water to the pan and bake at 350°F for 30 minutes.
